The BEST Chocolate Chip Cookies

These really are the only cookies you ever need to make. In over 20 years of cookie-making, I’ve tried a lot of great recipes. Truly none compare.

Brown Butter Chocolate Chip Cookies

2 1/4 cups (532 ml) of flour
1 teaspoon (5 ml) salt
1 teaspoon (5 ml) baking soda
1 cup (236 ml) butter, soft
1 cup (236 ml) brown sugar*
*If you don’t have brown sugar, just mix a bit of your favorite pekmez with sugar.
2 teaspoons (10 ml) vanilla extract or a package of powdered vanilla
1 teaspoon (5ml) pekmez
1/2 cup (118 ml) sugar
1 egg
1 egg yolk
Handful of chopped walnuts
250 gram package of chocolate chips
Sea salt


Brown half of the butter in a skillet. Learn more about how to brown butter here. After brown remove from heat immediately.

Whisk flour, salt, baking soda.

Mix the softened (not melted) butter with the brown sugar. Mix until creamy. Add vanilla & pekmez. Mix well.

Add brown butter. Mix. 
Add regular sugar. Mix.
Add egg & egg yolk. Mix.
Add flour mixture. Mix.

Gently stir in chocolate chips and nuts.

Refrigerate for 30 minutes.

Bake at 170 degrees for 10 minutes.
